After her celiac disease diagnosis, Paulina Korzekwa taught herself to bake and eventually opened Audacieuse Vanille (later Pâtisserie Béline), a gluten-free and vegan bakery in Verdun, Montreal. She ran the bakery, with Tatyana’s help, for eight years, until September 2024.
Tatyana Abouzeid, a graduate of the Institut de tourisme et d’hôtellerie du Québec’s pastry program, gained experience at various establishments, including l’Atelier Joël Robuchon. She joined Paulina in 2021, and they quickly became immersed in creating their unofficial vegan and gluten-free test kitchen. This book is the result of almost five years of collaboration.
